Veggie’s Day Out!!!

Back from our vacation from Pune, we decided to relax at home this weekend and try out our hand with some veg food.

We cooked Thai Green Curry and steamed rice for lunch and Tandoori Paneer Pizza with Macaroni salad for dinner. The sumptuous dinner was topped off with custard pudding with Raspberry Jelly.

Here is the recipe for lunch

Thai Green Curry with Steamed rice…..

Ingredients

  • One diced Carrot
  • Florets of Cauliflower
  • One diced brinjal
  • One diced capsicum
  • One packet of coconut milk
  • Few basil leaves
  • Lime juice
  • Salt to taste
  • Oil
For green paste
  • One bunch of Coriander with the stems
  • Lemon grass
  • 7-8 Green chilies
  • Finely cut Ginger
Preparation
  1. Mix the above ingredients for the green paste in a food processor & grind to a smooth paste
  2. Heat some oil in a pan & add the green paste & sauté for few minutes
  3. Add the diced carrot, cauliflower, brinjal & capsicum with some water to the green paste & allow the vegetables to cook
  4. Add the coconut milk to the above mixture
  5. Add salt, lime juice & shredded basil leaves
  6. Simmer for few minutes & serve with steamed rice

Dinner menu of Tandoori Paneer Pizza & vegetable Macaroni salad

Ingredients for Tandoori Paneer Pizza

  • 100gms diced paneer (cottage cheese)
  • One cup Grated cheese
  • 2 sliced onions
  • 2 sliced tomatoes
  • 1 big sliced capsicum
  • One cup boiled sweet corn
  • Pizza sauce & tomato ketchup
  • 2 Pizza Base

For the marinade

  • One cup of curd (yogurt)
  • Tandoori masala
  • Ginger garlic paste
  • Lemon juice
  • Salt & red chilli powder to taste

Preparation

  1. Mix the marinade ingredients in a bowl & mix the diced paneer cubes & set aside in the refrigerator for ½ hour
  2. Meanwhile sauté the onions, tomatoes ,capsicum & sweet corn for few minutes
  3. Add the marinated paneer cubes to the above mixture & heat for 3-5 minutes
  4. Spread the pizza sauce & tomato ketchup over the pizza base
  5. Spread the vegetable & paneer mixture onto this base
  6. Add grated cheese & a pinch of salt
  7. Cook in the preheated OTG/Microwave for 7-10 mins
  8. Delicious Indian Italian pizza is ready to be savored.


Ingredients for Vegetable Macaroni Salad
  • Boiled macaroni
  • ½ cup finely diced spring onion
  • ½ cup finely diced tomatoes
  • ½ cup grated cheese
  • 100 gms boiled sweet corn
  • Salt & pepper to taste

Preparation

  1. Mix the finely diced spring onion & tomatoes in a bowl along with the boiled macaroni
  2. Add the boiled sweet corn
  3. Add cheese & salt & pepper to taste
  4. Refrigerate before serving


Desert Menu

Custard pudding with raspberry jelly
Ingredients
  • 2 teaspoons Custard powder
  • One packet of raspberry jelly
  • ½ litre milk
  • 5-6 teaspoons of sugar
  • 500 ml boiling water

Preparation

  1. Add boiling water to the jelly crystals & allow the jelly to set in the jelly mould
  2. Heat milk in a pan
  3. Add sugar & keep stirring
  4. Mix 2 teaspoons of custard powder with some milk & add the same to the boiling milk
  5. Heat for 3-4 minutes
  6. Allow the milk to set in a custard bowl
  7. Refrigerate before serving

Our First Rendezvous with the Kitchen

A Chick & A Cook start their first chapter in cooking with “Indian Chicken Curry” for lunch & “Mexican Burrito” for dinner.

Tired of eating the same McD’s & Punjabi food, we decided to try our hand at cooking some yummy stuff ourselves on the weekend. This weekend’s menu was Chicken curry & Mexican burrito with cold coffee.

Lunch Menu:

Chicken Curry – Although the preparation for this scrumptious dish looks very difficult, it’s actually very simple & straightforward. The preparation time including the marinating time is 1 hr 20 min.

Ingredients

For Marinating –

  • 4 spoons of set curd
  • 2 spoons of Chicken masala
  • 1 spoon of Ginger garlic paste
  • 1 teaspoon salt & chilli powder

For Curry

  • 500 gms chicken pieces, washed & boiled
  • 2 medium sized tomatoes
  • 2 onions
  • Coriander leaves
  • Chicken curry masala
  • Salt & chilli powder as per your taste

Preparation

  1. Create a mixture of the marinating ingredients.
  2. Marinate the chicken pieces in the mixture & set aside for an hour in refrigerator.
  3. Meanwhile create a paste of the tomatoes, onions & coriander leaves.
  4. Heat oil in the pan & add the above created paste & sauté for some time.
  5. Add chicken masala powder along with salt & chilli powder.
  6. Remove the marinated chicken from the refrigerator & add it to the gravy.
  7. Add water as & when required & allow it to boil till the chicken gets cooked.
  8. Garnish with cucumber, tomato & coriander.
  9. Serve with hot chapattis & green salad.

Dinner Menu

Corn and Bean Mexican Burrito

Ingredients

  • 4 tortillas
  • Salsa sauce
  • 1 finely diced onion
  • 1 finely diced tomato
  • 100 gms Boiled corn
  • 100 gms Boiled beans
  • 1 cup grated cheese
  • Salt, chilli powder, pepper, coriander powder as per taste

Preparation

  1. Heat oil in a pan.
  2. Add the finely diced onions & tomatoes.
  3. When the onions turn brownish pink, add the mashed beans & corn.
  4. Add salt, pepper, coriander powder & chilli powder as per your taste.
  5. Microwave the tortillas for 20 secs.
  6. Apply the salsa sauce to the tortillas.
  7. Place the above mixture in the center of the tortillas & add grated cheese onto it.
  8. Fold the tortillas. Your wrap is ready.

Mexican burrito served with tortilla chips & salsa dip sauce with cold coffee is an ideal Sunday night menu.
