Our First Rendezvous with the Kitchen

A Chick & A Cook start their first chapter in cooking with “Indian Chicken Curry” for lunch & “Mexican Burrito” for dinner.

Tired of eating the same McD’s & Punjabi food, we decided to try our hand at cooking some yummy stuff ourselves on the weekend. This weekend’s menu was Chicken curry & Mexican burrito with cold coffee.

Lunch Menu:

Chicken Curry – Although the preparation for this scrumptious dish looks very difficult, it’s actually very simple & straightforward. The preparation time including the marinating time is 1 hr 20 min.

Ingredients

For Marinating –

  • 4 spoons of set curd
  • 2 spoons of Chicken masala
  • 1 spoon of Ginger garlic paste
  • 1 teaspoon salt & chilli powder

For Curry

  • 500 gms chicken pieces, washed & boiled
  • 2 medium sized tomatoes
  • 2 onions
  • Coriander leaves
  • Chicken curry masala
  • Salt & chilli powder as per your taste

Preparation

  1. Create a mixture of the marinating ingredients.
  2. Marinate the chicken pieces in the mixture & set aside for an hour in refrigerator.
  3. Meanwhile create a paste of the tomatoes, onions & coriander leaves.
  4. Heat oil in the pan & add the above created paste & sauté for some time.
  5. Add chicken masala powder along with salt & chilli powder.
  6. Remove the marinated chicken from the refrigerator & add it to the gravy.
  7. Add water as & when required & allow it to boil till the chicken gets cooked.
  8. Garnish with cucumber, tomato & coriander.
  9. Serve with hot chapattis & green salad.

Dinner Menu

Corn and Bean Mexican Burrito

Ingredients

  • 4 tortillas
  • Salsa sauce
  • 1 finely diced onion
  • 1 finely diced tomato
  • 100 gms Boiled corn
  • 100 gms Boiled beans
  • 1 cup grated cheese
  • Salt, chilli powder, pepper, coriander powder as per taste

Preparation

  1. Heat oil in a pan.
  2. Add the finely diced onions & tomatoes.
  3. When the onions turn brownish pink, add the mashed beans & corn.
  4. Add salt, pepper, coriander powder & chilli powder as per your taste.
  5. Microwave the tortillas for 20 secs.
  6. Apply the salsa sauce to the tortillas.
  7. Place the above mixture in the center of the tortillas & add grated cheese onto it.
  8. Fold the tortillas. Your wrap is ready.

Mexican burrito served with tortilla chips & salsa dip sauce with cold coffee is an ideal Sunday night menu.
